Cherry Bakewell Sundae Smash

Ingredients

Serves 3

  • 210g Curious Curds Cherry Bakewell Curd

  • 1 small Bakewell Tart or Madeira loaf, cubed

  • 200ml double cream

  • 125g mascarpone

  • 2 tbsp icing sugar

  • ½ tsp vanilla extract

  • Zest of ½ lemon

  • 2 tbsp flaked almonds, toasted

  • Fresh cherries to garnish

Method

  • Toast almonds until golden and set aside.

  • Whip cream, mascarpone, icing sugar, vanilla and lemon zest to soft peaks.

  • In a sundae glass, layer sponge cubes, curd and whipped cream.

  • Repeat, and top with more cream, cherries, toasted almonds and flowers.
