
Cherry Bakewell Sundae Smash

Ingredients
Serves 3
1 small Bakewell Tart or Madeira loaf, cubed
200ml double cream
125g mascarpone
2 tbsp icing sugar
½ tsp vanilla extract
Zest of ½ lemon
2 tbsp flaked almonds, toasted
Fresh cherries to garnish
Method
Toast almonds until golden and set aside.
Whip cream, mascarpone, icing sugar, vanilla and lemon zest to soft peaks.
In a sundae glass, layer sponge cubes, curd and whipped cream.
Repeat, and top with more cream, cherries, toasted almonds and flowers.
