Mini Cornish Apple Crumble Pasties

Ingredients

Makes 6

  • 1 large tbsp The Curious Curds Co. Apple Crumble Curd

  • 1 sheet ready-rolled shortcrust pastry – cut into 6 pasty rounds

  • 2 Bramley apples, peeled, cored and diced

  • A squeeze of lemon

  • A pinch of ground cinnamon

  • A handful of sultanas

  • 1 egg, beaten (for egg wash)

For the Crumble Topping

  • 30g butter

  • 30g soft brown sugar

  • 50g plain flour

  • 1 tbsp oats

Method

  • Preheat the oven to 200°C (180°C fan). Line a tray with parchment.

  • Mix diced apple with lemon, cinnamon, sultanas, a good spoonful of curd and a dollop of clotted cream.

  • Rub together the crumble ingredients to make a coarse crumb.

  • Roll out pastry on a floured surface and cut 6 circles (use a side plate).

  • Spoon filling into the centre of each and crimp the edges like a proper Cornish pasty.

  • Brush with egg wash, sprinkle with crumble and bake for 20–25 minutes until golden.
