Makes 10 Tarts
1 puff pastry sheet
284ml of double cream
Less 1/4 cup of icing sugar
Preheat oven gas mark 5/190°C.
Unroll pastry sheet and spread The Cherry Tree Strawberry, Rhubarb & Vanilla Jam generously across the sheet.
Cut into 10 rectangles.
Place on baking tray and brush with egg wash.
Place on middle shelf of oven and bake till golden.
Once baked, take out and leave to cool completely.
Meanwhile, in a bowl whip together the cream and icing sugar. Whip till it’s reached soft peak. Put in fridge to firm up.
Slice up strawberries.
Once pastry has cooled down, lay strawberries on each rectangle.
Pipe the cream over the strawberries, and place strawberry half on each end.
Dust with icing sugar and serve.
