Strawberry Tarts Recipe

Ingredients

Makes 10 Tarts

  • The Cherry Tree Strawberry, Rhubarb & Vanilla Jam

  • 1 puff pastry sheet

  • 284ml of double cream

  • Less 1/4 cup of icing sugar

  • Strawberries

  • Egg wash

Method

  • Preheat oven gas mark 5/190°C.

  • Unroll pastry sheet and spread The Cherry Tree Strawberry, Rhubarb & Vanilla Jam generously across the sheet.

  • Cut into 10 rectangles.

  • Place on baking tray and brush with egg wash.

  • Place on middle shelf of oven and bake till golden.

  • Once baked, take out and leave to cool completely.

  • Meanwhile, in a bowl whip together the cream and icing sugar. Whip till it’s reached soft peak. Put in fridge to firm up.

  • Slice up strawberries.

  • Once pastry has cooled down, lay strawberries on each rectangle.

  • Pipe the cream over the strawberries, and place strawberry half on each end.

  • Dust with icing sugar and serve.
