Ingredients
Serves 2-4
For the Nachos
Large bag of tortilla chips
200g grated mature cheddar
For the frijoles
200g black beans, drained
150g The Cherry Tree Spicy Tomato & Caramelised Onion Table Sauce
1 red onion, finely sliced
2 cloves of garlic, finely chopped
1 tbsp olive oil
1 tsp paprika
2 tbsp coriander, finely chopped
For the guacamole
2 avocados
½ red onion, finely sliced
2 tbsp coriander, finely chopped
Juice of 1 lime
Pinch of salt
To serve
Jalapeños and wedges of lime
Method
Preheat your oven to 180˚C. In a small saucepan soften your onion and garlic in oil and add in your black beans and paprika. Gently sauté for 5 minutes and then pour in The Cherry Tree Spicy Tomato & Caramelised Onion Table Sauce and some coriander. Reduce the heat and cook for 10 minutes stirring occasionally.
Toss your tortilla chips with grated cheese and cook in the oven for 5-6 minutes until melted.
For the guacamole simply mix all ingredients in a bowl with a fork to smash into a coarse texture. Season to taste. Serve your Cherry Tree nachos with the spicy refried black beans on top and guacamole on the side.
