The Cherry Tree Nachos with Frijoles Recipe


Serves 2-4

For the Nachos

  • Large bag of tortilla chips

  • 200g grated mature cheddar

For the frijoles

For the guacamole

  • 2 avocados

  • ½ red onion, finely sliced

  • 2 tbsp coriander, finely chopped

  • Juice of 1 lime

  • Pinch of salt

To serve

  • Jalapeños and wedges of lime


  • Preheat your oven to 180˚C. In a small saucepan soften your onion and garlic in oil and add in your black beans and paprika. Gently sauté for 5 minutes and then pour in The Cherry Tree Spicy Tomato & Caramelised Onion Table Sauce and some coriander. Reduce the heat and cook for 10 minutes stirring occasionally.

  • Toss your tortilla chips with grated cheese and cook in the oven for 5-6 minutes until melted.

  • For the guacamole simply mix all ingredients in a bowl with a fork to smash into a coarse texture. Season to taste. Serve your Cherry Tree nachos with the spicy refried black beans on top and guacamole on the side.
