Ultimate Hot Garlic Pickle Chilli

Ingredients

Serves 4

  • 1 tbsp extra virgin olive oil

  • 400g mince beef (5% fat)

  • 1 medium onion, finely diced

  • 2 celery sticks, diced small

  • 1 large carrot, diced small

  • 2 tbsp The Cherry Tree Hot Garlic Pickle

  • 1¼ tsp mild chilli powder

  • 1 tsp smoked or sweet paprika

  • 1¼ tsp ground coriander

  • 1 tsp ground cumin

  • 1 tsp dried oregano

  • 2 bay leaves

  • ½ tsp flaked sea salt, or to taste

  • ½ tsp cracked black pepper, or to taste

  • 1 tin (400g) chopped tomatoes

  • 3 tbsp tomato purée

  • 1 cup beef or chicken stock

  • 1 tin (400g) black beans, drained + rinsed

TO SERVE

  • ⅓ cup yoghurt

  • 4 tsp fresh coriander, chopped

Optionals - chopped avocado, chilli flakes, sliced jalapeños, rice, quinoa, sweet potato or cauliflower rice.

Method

  • Heat the olive oil in a non-stick frying pan. Add the beef and cook for 3-4 minutes, add the onions, celery and carrot and sauté for 3 minutes on a medium heat until slightly soft.

  • Add The Cherry Tree Hot Garlic Pickle, spices, bay leaves, salt, pepper, tomatoes, tomato purée, stock and beans. Simmer for about 15 minutes on a low/medium heat until it starts to thicken.

  • Adjust seasoning and spices to taste and serve with toppings of your choice and rice, quinoa, baked sweet potato or cauliflower rice.
